Bacon-Wrapped Asparagus

This is such a quick and easy recipe! I love popping these in the oven for a quick snack in-between meals when I start getting the munchies! It also works great as an appetizer if you’re having guests over.

Not only is it delicious, but the asparagus in it is also a great source of folate, vitamins A, C, and K. It’s also full of antioxidants. According to Healthline:

Asparagus is also high in insoluble fiber so it’s great for digestion too!

Bacon, on the other hand, is one that I’ve included but should be used sparingly.

On the positive side, it provides about 5 g of protein and about 40 mg of potassium.

We want to go for turkey bacon over regular bacon in this recipe because of the lower calorie count, and uncured over cured so we aren’t including preservatives.

The benefits of uncured over cured meats is debated (you can read more about that here), so if you’d rather keep the bacon out of it, you can either replace it with something else or just bake the asparagus as they are (it’s still very good this way!).

Ingredients

1 bundle of organic asparagus

1 package of grass-fed, uncured turkey bacon

1 tablespoon of olive oil

2 teaspoons of Himalayan rock salt

2 teaspoons of garlic powder

Recipe

  1. Preheat oven to 400 degrees Fahrenheit
  2. Cover baking sheet with foil or parchment paper
  3. Wash and pat asparagus dry.
  4. Pour olive oil evenly over asparagus.
  5. Add salt and garlic powder
  6. Wrap bacon slices around asparagus. You may need to slice the bacon into thinner pieces if your asparagus is thin and your bacon is extra thick.
  7. Place in the oven to cook for about 12 minutes
  8. They’re ready once the asparagus is easily stabbed with a fork and the bacon is slightly crispy. Bon Appetite!
