2 bundles of soba noodles, or 2 servings (580 calories)
4 cups water
1/3 cup soy sauce (60 calories)
1 teaspoon dashi (10 calories)
about 1/2 cup of chopped green onions (16 cal)
1/8 sheet of seaweed (3 cal)
Recipe
Just purchase a package of soba noodles at your local grocery and heat a pot of water about 3/4 full.
Once boiling, take however many servings of noodles desired and break into half into the boiling water.
Boil for about 12-15 minutes, or until the noodles are the way you like your pasta noodles.
Remove noodles from heat and drain. Set aside.
In another pot, pour 4 cups of water to 1/3 cup soy sauce (to taste) and 1 teaspoon of dashi (Japanese soup stock) to a saucepan and heat (or you can chill to eat the noodles cold).
You can garnish with fresh green onions and cut up seaweed (it’s easy to cut uniform slices with scissors).
If you’re really feeling up to a challenge, you can also fry your own tempura to add! Some common fried tempura choices are shrimp and sweet potato! ⭐️And voila! Enjoy your noodles!
